  • 1 pound eggplant, sliced ​​about ½ inch thick

  • 4 tablespoons (half stick) butter or margarine
  • 1 ½ pounds chicken liver, trimmed and washed
  • 1 medium onion, sliced ​​thin
  • ½ teaspoon chopped basil leaf
  • 1 can of condensed chicken broth
  • 2 tomatoes, ripe, peeled, chopped
  • 2 tablespoons chopped parsley

HOW TO PREPARE

  • Mix 3 tablespoons of salt and flour
  • Coat the eggplants with this mixture and set aside on a plate.
  • In a large skillet, combine the oil and 2 tablespoons butter and sauté the eggplant for about three minutes or more until the desired “doneness” of the eggplant is reached.

  • Add the tomatoes and cover the pan.
